Pineapple Kesari



Ingredients:
  • Rava/Semolina/Suji-1cup
    sugar-1cup
    ghee-1/2 cup
    Water-1cup
    milk-1cup
    Fresh Pineapple-1small
  • (Cut the thick outer skin of the pineapple with a sharp knife.
    Remove the eyes by using a fine scoop or knife. Cut the pineapple into slices,
    discard the hard center. Cut the slices into small pieces. Take about 1 &1/2 cups
    of the pineapple pieces)
    cardamom powder-1/4 tsp
    salt-a pinch
    kesari food color-1/4 tsp(dissolved in 2 tbsp milk)(optional)
    cashew , almond and raisins-1/4 cup

    Method:
    Take a non-stick pan (don't use steel vessel because rava il stick @bottom)
    fry the rava with 2 tsp of ghee until you smell the fried rava's aroma
    and the rava is well coated with the ghee, when its slightly turning brown.switch off the fire.transfer dis ghee roasted ghee into a plate and keep aside.
    Add the sugar, 1cup water,1 cup milk, pineapple pieces with juice, cardamom powder, salt along with 1 tsp of ghee and bring it to boil on a high flame,boil till the sugar water has a mild syrupy texture.Add the Kesar color(optional). Now simmer and slide the fried rava little by little into the boiling Sugar syrup water taking care that no lumps of rava are formed.The flame should be low that time.Stir thoroughly while adding simultaneously half of the nuts and raisins and half of the remaining ghee.Allow to cook for 5m till all the water is absorbed and the rava is fully cooked.When u will get Halwa style, now add rest of the ghee and mix well to the rava kesari.Remove from heat and let it cool from hot to warm.Serve and garnish with the remaining nuts, badam and raisins.
